Handcrafted sugar roses take a long time to make so you are going to pay for that time and those creations. Even if you are not getting anything as detailed as that prices can shoot up pretty quickly.
You are paying for their talent and expertise, most bakers go through extensive training for this. The cakes also have to be made pretty much right before your wedding and only so many can be made in a day.
